Above all, we are friends. After years of experience in the restaurant industry, we chose to bring together our skills and passion in a single project.
Michele
Over the past six years, I have worked in traditional restaurants, an experience that allowed me to build a strong foundation and deepen my expertise in preparing classic first and second courses from our culinary tradition.
Hands-on training has taught me the importance of cooking techniques, the careful selection of ingredients, and precise kitchen organization. These are fundamental elements that truly make the difference in the final result.
I enjoy working with classic recipes, respecting their roots while always seeking balance in flavors and attention to presentation. To me, tradition is not just memory, but a starting point to be honored and elevated every day with care and passion.
Lorenzo
Over the past five years, I have worked in the world of artisanal baking, a journey that has allowed me to grow every day among doughs, fermentation processes, and baking techniques, eventually specializing as a pizza chef and pastry chef.
I love working with fermentation and experimenting with selected flours and grains, always seeking the right balance between tradition and innovation. To me, every dough has its own personality, and my goal is to bring out the very best in it.
Over time, I have attended advanced training courses to deepen my knowledge of pastry techniques, high-hydration doughs, and everything related to the art of baking. I am passionate about continuing to study and refine my skills, because in the kitchen there is always something new to discover.
